Classic Sausage Rolls

Buffet Friendly Sausage Rolls

Ingredients

• 1 pack (350g-400g) good-quality sausages or sausage meat

• 1 sheet ready-rolled puff pastry

• 1 egg (beaten)

• Optional: If you want to add flavor to the sausage meat go with pepper ,dried herbs or nutmeg but just a pinch or two.

How many people will this feed?

Sausage rolls are one of those foods that disappear faster than you expect.

As a rough guide:

1 standard sausage roll = 1 person

2 per person if it’s the main savoury

3 per person if feeding hungry adults or teenagers

For parties, it’s always better to round up rather than down.

Doubling up (and why it’s worth it)

If you’re already making sausage rolls, doubling the quantity rarely doubles the effort.

• Puff pastry is easier to handle in batches

• The filling mixes just as well in a bigger bowl

• Extra rolls freeze beautifully

If you have freezer space, make more than you think you need.

Future-you will be grateful.

Timing it right

Sausage rolls are forgiving, but timing matters if you want them at their best.

• They can be assembled earlier in the day

• Keep chilled until ready to bake

• Bake close to serving time if possible

If reheating:

• Use the oven or air fryer, not the microwave

• This keeps the pastry crisp

A gentle note on stress

If sausage rolls don’t look perfect, it doesn’t matter.

People remember:

• That they were fed

• That there was plenty

• That it tasted good

That’s the win.

Method

1. Preheat oven to 200°C / 180°C fan

2. Roll sausage meat into a long log

3. Place along the edge of the pastry and roll up

4. Seal with beaten egg, place seam-side down

5. Cut into bite-sized rolls

6. Brush with egg

7. Bake for 20–25 minutes until golden

If you have the time…

The Artisan Layer: Homemade Puff Pastry

If you have the time — and you fancy spending a little methodical, satisfying, creative time in the kitchen — making your own puff pastry is a lovely thing to do.

It’s not difficult, but it does ask for patience and care. The process of folding, resting, and rolling is quietly calming, and the results are worth it.

Homemade puff pastry gives sausage rolls a depth and flakiness that feels truly special — perfect if you’re feeding people you love and want to slow down and enjoy the making as much as the sharing.

💡 Lovely buffet fancy tip:

Sprinkle before popping in the oven with dried mixed herbs or nigella seeds or sesame or all three if you want to be a bit fancy . You can also add bold flavors to the sausage meat but that is a whole other post!

Let them cool slightly — they’re just as good warm or cold.
